Healthy Meals On A Budget: Roasted Chicken With Vegetables And Herbs

The recipe takes one hour to prepare and is rich with protein. It is easy to cook and definitely within the budget.

Ingredients Required To Prepare The Dish

One pound of red potato

Two medium carrots

Two stalks of peeled celery

One red onion chopped

Two teaspoons of olive oil

Fresh ground pepper powder and kosher salt

Three chicken breast (boneless is not necessary) One teaspoon of poultry seasoning

One half a lemon

One-fourth of parsley

Step By Step Method To Prepare The Dish

Step One

Firstly, take the top section of the oven and preheat it at four hundred and fifty degrees. Take a baking sheet and add the carrots,  potatoes, celery, onions,  olive oil, salt, and pepper. Then, toss them together and place them in one single layer. Roast for twenty minutes until it turns light brown, and the potatoes grow soft.

Step Two

Next, while the vegetable roast, take the chicken breast and marinate it with oil,  poultry seasoning, and salt. Now that the Vegetables are ready to place the chicken breast on top of it and roast it. Wait and cook for twenty minutes until the skin above turns golden brown and reaches a minimum temperature of one hundred sixty-five degrees. 

Step Three

The next step is to remove the chicken breast and rest it for a while. Add lemon juice and parsley to the vegetables and mix it. Now remove the chicken bones and cut into pieces. You can divide it in serving plates and sprinkle a little more of lime juice.

The recipe is not only budget-friendly but takes only an hour to prepare. It’s delicious and nutrient-rich for your family.

Ingredients Required To Prepare The Dish

One medium-sized yellow squash

Kosher salt

One cup of shredded mozzarella

One-fourth cup of parmesan(grated)

Cooking spray

Four sliced scallions

Twelve pieces of six-inch corn tortillas

One cup of salsa verde

One large size of ripe tomato

Nine ounces frozen pack of spinach

Step By Step Method To Prepare The Dish

Firstly, preheat the oven at four hundred and twenty-five degrees. Then take a baking sheet and place the squash. Sprinkle some salt over it and bake for ten minutes until it turns soft. You need to set the squash half its way to cook both sides. After that, take a small bowl and mix it with parmesan, mozzarella, and salt.

Take an eight-inch baking dish and add the cooking spray. Take four tortillas and place them at the bottom of the bowl with half of the scallions and squash. Next, add one-third cup of cheese and salsa verde on top of the vegetables. Make another layer of tortillas and repeat the same thing. Finally, finish the overlapping layers by repeating the process. Finally, bake the dish without placing a lid for twenty-five minutes until it turns golden brown. You can garnish it with scallions and serve it.
