Healthy Food Recipes – Pancakes With Greek Yogurt And Blueberry Peach Sauce

Preparation time – 10 minutes

Cooking time – 40 minutes

Ingredients

  • Flour – ½ cup
  • Pineapple juice – 6 ounces, unsweetened
  • Peach – 1, peeled and cut into pieces
  • Blueberry – 1 cup, frozen
  • Orange zest – 2 tsp, grated finely
  • Brown sugar – 2 tbsp
  • Baking soda – 1 ½ tsp
  • Salt – a pinch
  • Eggs – 2
  • Greek yogurt – 2 cups
  • Cooking spray

Directions

  • Place a saucepan on medium heat and add the pineapple juice along with blueberries and let them boil for about 15 minutes so that all the blueberries become soft and the mixture becomes thick. Now add the chopped peach and cook for 6 minutes more. When done, take it off the flame.
  • In the meantime, in a large bowl, mix the yogurt along with baking soda, orange zest, flour, eggs, and brown sugar. Make sure the mixture is smooth.
  • Take a large skillet and put it on medium heat. When it is hot, apply cooking spray on it. Now pour a ladleful of batter keeping space between two and cook for a few minutes. Turn the other side and let it cook well. When both sides are cooked properly, take them out on a plate.
  • Pour the blueberry peach sauce in a small bowl and serve with the hot pancakes and immerse yourself in the deliciousness.

Healthy Food Recipes – Banana Pancakes With Sour Cream And Maple Syrup

Preparation time – 10 minutes

Cooking time – 10 minutes

Ingredients

  • Sugar – 3 tbsp
  • Bananas – 3, ripe and cut into pieces
  • Flour – 1 ½ cup
  • Baking powder – 2 tsp
  • Salt – a pinch
  • Sour cream – ½ cup
  • Unsalted butter – as required
  • Lemon zest – 1 tsp
  • Vanilla extract – 1 tsp
  • Eggs – 2, large
  • Milk – ¾ cups and 1 tbsp, separate
  • Maple syrup – as required

Directions

  • Take a big bowl and add the ¾ cup milk, lemon zest, vanilla extract, sour cream, and eggs and mix them well.
  • In another bowl, add the flour along with salt, sugar and baking powder and mix well. Now pour the milk and egg mixture into this bowl of the flour mixture and using a spoon, mix them thoroughly.
  • Put a skillet on medium heat and add some butter. As the butter melts, pour ladleful of the batter and let it cook for a few minutes till you see bubbles on the surface. Add a few banana pieces on the top of the pancake; wait for a few seconds and flip it over to cook the other side properly. When both sides are nicely browned, take it out of the skillet. This way, make all the pancakes until your batter is finished.
  • Pour maple syrup on the top of the pancakes and garnish with some banana slices and serve.
