One meal that is equally important as breakfast is lunch. Lunch should be tummy-filling and healthy too so that you can get adequate energy to work. Thus, note down the healthy lunch recipes. You can prepare easily at home and carry to your office.

If you are thinking that I am going to make a salad, you are entirely wrong. Today I am preparing a Vietnamese dish and a Korean dish.

Healthy Lunch Recipes – Caramel Pork In Vietnamese Style

Preparation time – 15 minutes

Cooking time – 20 minutes

Ingredients

  • Pork tenderloin – 1 pound, cut into cubes
  • Rice vinegar – ¼ cup
  • Carrots – 2, large and peeled
  • Salt – to taste
  • Mint – ¼ cup, finely chopped
  • Brown sugar – ¼ cup and 1 tsp
  • Canola oil – 1 tbsp
  • Fish sauce – 1 tbsp
  • Chicken broth – ½ cup, low sodium variety
  • Red chili – 1, cut into thin slices
  • Black pepper – as required
  • Cooked rice – for serving

Directions

  • Take a bowl and mix the rice vinegar with 1 tsp of sugar, a pinch of salt and red chili slices. Grate the carrots and add them to this. Mix all the things very well and add the chopped mint. Keep the bowl aside.
  • In a small bowl, mix the chicken broth with fish sauce and ¼ cup of brown sugar.
  • Marinate the cubed pork with salt and black pepper powder. Heat a skillet on medium flame and tip the oil. As the oil becomes hot, add the pork cubes and fry both sides for a few minutes so that they become golden brown.
  • Take the fried pork pieces out of the skillet and pour the chicken broth mixed with sauce and brown sugar. Let it boil for a few minutes so that the mixture thickens and appear like a glaze. Transfer the pork pieces in the skillet and coat with the glaze very well.
  • Add the caramel pork pieces on a plate and add the pickled carrots with mint on the side and serve with cooked white rice. Your delicious lunch is waiting for you.

Healthy Lunch Recipes – Lettuce Wraps With Beef And Pineapple In Korean Style

Preparation time – 10 minutes

Cooking time – 10 minutes

Marinating time – 1 hour

Ingredients

  • Beef sirloins – 1 pound, cut into thin slices
  • Lettuce – 1 few
  • Sesame oil – 1 tbsp
  • Pineapple juice – ¼ cup
  • Honey – 1 tbsp
  • Soy sauce – 2 tbsp, low-sodium variety
  • Garlic – 1 clove, minced
  • Ginger – 1 tbsp, grated
  • Canola oil – 1 tbsp
  • Red chili flakes – ½ tsp
  • Salt – to taste

Directions

  • In a large bowl, add the garlic, ginger, say sauce, sesame oil, honey, chili flakes, pineapple juice and season with salt. Add the slices of beef to it and mix with all the ingredients and keep the bowl aside for about 1 hour.
  • After 1 hour, put a skillet on medium heat and pour the canola oil. As it is hot, fry the marinated beef slices on both sides for about 6-7 minutes so that each piece becomes soft.
  • When done, take a lettuce leaf and put some of the cooked beef and wrap it. Repeat this process with other lettuce leaves as well.
  • You can have the tasty lettuce wraps in-home or pack for lunch.
  • You can also have it with cooked rice and scallions as the Koreans do.
