Half pitted avocado

Two tablespoons of white wine vinegar

One tablespoon of chopped oregano

One tablespoon of fat-free plain yogurt (Greek)

Two large cloves of minced garlic

Twelve large slives of roasted grain bread

One cup of baby arugula

Two and a half ounces of smoked mozzarella cheese

Thinly sliced half red onion

One-third cup of packed dried tomatoes

Half cup of a sliced unpeeled English cucumber

One ounce of sliced pepperoncini

Two and a half-ounce of provolone

One large fresh roasted orange bell pepper

Step By Step Method To Cook The Sandwich

At first scoop, the avocado from its skin and place it into a bowl. Mash it with a spoon and mix it with oregano, vinegar, garlic, and yogurt. Keep mixing it until it gets smooth. Take the bread sliced and spread the avocado on one side of the two.

Next, top the four bread slices with tofu, onions, arugula, and tomatoes. Place the other installments of the bread on the top of these. Use cucumber,  pepperoncini, roasted peppers, and provolone as toppings.

Finally, insert bamboo sticks in every sandwich and cut into halves. The lunch is now ready to serve.

Squash And Spinach Lasagna

Vegetable lasagna can be tasty and healthy vegetarian recipes like other non-vegetarian lasagnas. It takes approximately one and a half hour to prepare squash and spinach lasagna at home.

Ingredients Required To Prepare The Dish

Nine lasagna noodles

One tbsp of virgin olive oil

Three chopped garlic cloves

One large chopped onion

Kosher salt and black pepper powder

Four cups of low-fat milk

One-fourth cup of cornstarch

10 ounces of baby spinach

Half cup of freshly chopped parsley leaves

One-fourth cup of nutmeg

One butternut squash

Two cups of shredded mozzarella

Step By Step Method To Cook

At first, preheat the oven at four hundred degrees. Soak the lasagna noodles in warm water. Next, take a large skillet and heat oil. Add onions, garlic,  pepper, and salt. Cook the vegetables for ten minutes until it turns brown. You can add water if it becomes dry. 

Take half a cup of milk and mix it with cornstarch until it becomes smooth. Heat three and a half cup of milk in a saucepan. Mix and boil the cornstarch in milk. Wait for the liquid to get thick and wait until it forms a batter. Add the onion mix, nutmeg,  spinach, parsley and cook until the spinach is tender. Then turn down the heat and season it with salt and pepper.

Next step is to drain the cooked noodles and spread one up of spinach mixture. Place three lasagna noodles on the batter. Arrange the squash noodles and sprinkle some mozzarella cheese. Repeat the process with three cups of noodles on spinach mix and continue with the layers. Cover it with foil and save the extra mozzarella cheese. 

You need to bake it for about forty minutes and cool it down. Next, divide the lasagna into eight portions and serve it. You can also preserve it in the refrigerator.
