Healthy Soup: Rocket Sour ( Shorbat Jargir)
For Healthy Soup, you can choose this recipe. With a blend of arugula, spinach and cilantro make the soup delicious. Some warming spices like turmeric, allspice, and nutmeg makes the flavors of the green vegetables. While adding a potato makes a silky texture, and a few drops of olive oil will enrich the soup.
One medium yellow onion (about two cups) roughly chopped
Two tablespoons of light olive oil,
one teaspoon of ground turmeric,
one tablespoon of sea salt,
four crushed garlic cloves,
half teaspoon black pepper,
half teaspoon grated fresh nutmeg,
four cups homemade vegetable stock or low-sodium chicken stock,
one-fourth teaspoon of ground allspice,
seven ounces of arugula,
one medium chopped russet potato,
one-fourth ounces of fresh spinach,
one ounce cilantro,
two tablespoons of virgin olive oil and for serving,
plain whole-milk Greek yogurt.
How To Make It
Take a large saucepan, heat light olive oil over medium and add onion and garlic. Stir often about five minutes until tender, Now mix pepper, turmeric, allspice, salt and nutmeg stirring for two minutes. Add Vegetable or chicken stock and potato and bring it to a simmer and cook about ten minutes until the potato tender.
For garnish reserve a handful of arugula. Add cilantro, spinach and the remaining arugula to a pan. Bring it to a simmer over medium and cook for ten minutes. If you are preparing a lot of items at the same time, it’s better to shift the soup to a mixer and close the lid. Process until the excellent taste and pour the soup in four bowls.

Healthy Soup: Miso Soup With Turmeric And Tofu
Two tablespoons of extra virgin oil,
one large carrot, chopped,
one medium fennel bulb, quartered and trimmed,
one small yellow onion,
four halved garlic cloves,
one tablespoon black peppercorns,
three tablespoons white miso,
two teaspoon ground turmeric,
six ounces of firm tofu, cubed and minced chives for garnish.
How To Make It
Heat the olive oil in a large saucepan. Add fennel, carrot, garlic, onion, peppercorns, and turmeric. Stir it over medium heat until the vegetables coated with oil. Boil the vegetable after adding six cups of water for fifteen to twenty minutes. Discard the green and strain the soup in a bowl.
Take a saucepan and pour the broth into it and whisk the miso and heat with medium temperature. Stir in the tofu and season with salt and boil it for about two minutes until the tofu gets warm. Serve the healthy miso soup garnishing with minced chives.
