It is January and we are all beginning to put the New Year behind us. In many parts of the world it is the start of the holiday festivities and that means the return to work and the stresses of what the New Year may bring. It consists of canned fruit in a zip lock bag along with reduced fat sour cream, reduced-fat yogurt, chopped canned peaches, green onions, chopped zucchini, and pinto beans. Baked chicken is often served as a part of a main dish, but you can also serve it as an appetizer to start your meal or even have it as a side dish. A good recipe for this entree is one with four types of chicken, coated in tomato sauce and broccoli florets. Toppings for this entree can include reduced-fat sour cream, shredded cheddar cheese, and reduced-fat bell pepper or onion wedges. These chicken breasts can be baked in the oven or lightly fried for a healthier alternative.

For breakfast or brunch, there are endless healthy comfort food recipes that you can choose from. One of the most popular meals used to serve up at brunch is the zucchini lasagna. This healthy entree is easy to make and is filled with zucchini, mushrooms, eggplant, artichoke mushrooms, zucchini, and tomatoes.
